In a non-stick frying pan over medium heat, add 1 teaspoon of ghee and warm for 1 minute. Add bacon and cook until lightly browned.
Remove bacon and place in a large bowl.
Over low heat, add 2 teaspoons of ghee and heat for 1 minute. Add onion and cook, frequently stirring until soft and translucent. Add garlic and constantly stir for a further 1-2 minutes. Allow to cool.
Place the onion mixture and the rest of the ingredients in the bowl with the bacon. Mix thoroughly with your hands—roll the mixture into bite-sized balls.
Over medium-high heat, add remaining ghee (1 tablespoon) to the pan and warm for 1 minute. Fry the meatballs in batches until nicely caramelized. Then, turn down the heat and fry more gently until cooked through (approximately 10 minutes in total/per batch).
