1poundground turkey (minced turkey) - cooked and seasoned with Italian seasoning to taste
4tablespoonsonion powder - rehydrated in a bowl of water (one 1 white onion, chopped)
3slicesbacon - nitrate-free
2teaspoonsgarlic - minced
10cupswater
1 ½tablespoonsBetter Than Boullion Chicken Base
2cupsmilk
4mediumpotatoes - peeled and diced
½bunchkale - torn into bite-sized pieces
1pinchred pepper flakes - optional
1small blockParmesan cheese - optional
Instructions
Cook turkey with Italian seasoning to taste, drain fat, and set aside.
Fry bacon until crispy and set aside.
Cook garlic and onion in bacon fat until translucent.
In a large pot, add turkey, bacon, onion, garlic, water, and chicken base and bring to a boil.
Add potatoes and cook until soft, about 30 minutes.
Add milk and continue to simmer until heated through.
Add kale about 10 minutes prior to serving.
To serve, sprinkle individual servings with red pepper flakes and parmesan cheese.
Notes
If you are using a crockpot:1. Follow the directions above, but add potatoes with all the other ingredients, and cook on high for 4 hours.2. Once potatoes are soft, add milk.3. Cook on low for about one more hour, add kale 5-10 minutes prior to serving.
