1½cupsbeef stock (beef broth or beef bouillon) - unsalted
2cupswhite rice - white uncooked
8ouncesground beef (minced beef) - (85%) lean
⅓cupPanko breadcrumbs
2stalksgreen onions (scallions or green shallots)
1mediumegg - beaten
Instructions
Grate/zest 1-2 teaspoons of ginger into a small batter bowl. Add soy sauce, brown sugar, and garlic pressed with Garlic Press; whisk until combined. Transfer 2 tablespoons of sauce into a large bowl for meatballs.
Place broccoli in a manual food processor and process into finely chopped (1½ cups); work in batches. Add to a large bowl.
Add beef broth to the remaining sauce in a batter bowl and combine with a whisk. Pour sauce into the Deep Covered Baker. Add rice and gently stir.
Add beef, panko, whites of green onions and egg into the large bowl. Use a medium scoop to shape meatballs (about 15). Place on top of rice in the baker. Cover and microwave for 9-11 minutes. Make sure the internal temp is 160°F, and the rice is cooked.
Remove the lid. Microwave, covered for 3-4 minutes. Remove from the microwave and garnish with remaining onions.
