fire-roasted tomatoes

green onions (scallions or green shallots)

Instructions
In a large skillet, cook bacon until browned.
Add chopped onion and minced garlic to the skillet and cook for about 5 minutes.
Add ground beef and spices to the skillet, stirring thoroughly.
Once the ground beef has been browned, add the can of fire-roasted tomatoes.
Cook for 6 minutes or so, stirring occasionally.
Add handfuls of kale, and place the lid on the skillet for 2 minutes to soften.
Stir the entire mixture, incorporating the kale.
Remove from heat and serve into bowls.
Top with chopped green onion, guacamole, chopped avocado, or anything else that suits your fancy.
