Stuffed zucchinis are the best! That's why I'll share with you this zucchini stuffed turkey recipe I created for the days that I want a filling yet tasty meal.
1mediumzucchini - boiled and drained, cut into slices about 1/4-inch thick
1 ½teaspoonsalt
1 ½teaspoonItalian seasoning
2tablespoonsturkey broth - I used turkey broth
2tablespoonscoconut oil
½cupParmesan cheese - grated for toppings
Instructions
In a mixing bowl, mix the turkey, salt, seasoning, broth, and oil.
In a 2-quart glass bowl, place about half of the mixture in the bottom, pressing down until about 1/4-inch thick around the bottom of the pan.
Place the boiled and drained zucchini in the pan on top of the turkey. Spread evenly to cover all but the edges of the turkey mixture along the side of the pan. Sprinkle with salt and pepper to taste.
Use the remainder of the meat to cover the top of the zucchini. Add the cheese on top.
Bake for about 40-50 minutes at 350 degrees. Up the temperature to 400 degrees and bake for another 7-10 minutes to brown.
