200gramsbutter
2mediumeggs

1teaspoonbaking powder

½cupmilk - evaporated or skimmed milk
Instructions
Sieve your all-purpose flour with baking powder to avoid lumps, add sugar, and mix very well in a big bowl.
Add your butter or margarine and mix till it’s all comes together and form a breadcrumb.
In a small separate bowl, break in your two eggs and whisk; add your whisked egg into your flour and mix well with your clean hands until it’s well incorporated.
Add your milk and water and mix together but do not overwork your dough.
Wrap your dough and refrigerate for 30 minutes.
Wash your potato, rinse it, dice it into small cubes, and chop your onion into smaller pieces.
Wash carrot as well, scrape off the back and dice it into small cubes.
Light up your gas and place your saucepan on it and add 2 tablespoonfuls of vegetable oil. Set the gas on medium heat and add your chopped onions and minced meat. Stir until your meat change from fresh meat colour to brown colour.
Add your curry, thyme, seasoning, dry pepper, and a pinch of salt, stir and cover.
Leave it to boil for some minutes. After 2 to 3 minutes, add the diced potatoes and carrots, cover again and cook till it’s soft.
After 7 minutes, mix 2 tablespoons of multipurpose flour with a small quantity of water in a small bowl and mix it to the meat pie filling.
Stir the filling and take it off the gas, set it aside to cool off.
Pull your dough out of the fridge and cut it into small balls; roll it with a rolling pin on a floured surface.
Roll it flat but not thin, place your rolled dough on a dumplings mould, put in your meat pie filling inside, brush the edges of your dough with egg and close.
Repeat the process on the remaining dough till you are done moulding all the dough.
Grease the baking pan with some oil; you can line it with a baking sheet.
Put the moulded meat pie on the baking pan and brush the top of your meat pie dough with egg wash.
You can pierce the top of the meat pie dough with a fork.
After arranging it on the baking pan, preheat the oven to 150 degrees Celsius and leave for 5 minutes.
Place in the meat pie and bake it for 35 to 40 minutes.
Remove from the oven and allow to cool.
Your tasty Nigerian meat pie is ready to be served.
