Ingredients
Pasta and Meatballs Ingredients
8 ounces ground turkey (minced turkey) - lean
4 cloves garlic - finely chopped
¼ cup onion - finely chopped
¼ cup parsley - chopped
½ teaspoon oregano
¼ cup olive oil - extra virgin plus more for drizzling
1 large egg
1 pinch red pepper flakes
1 pinch salt
1 pinch ground black pepper
1 cup Parmesan cheese - grated
Tomato Sauce Ingredients
2 tablespoons olive oil - virgin
2 cloves garlic - chopped
1 pinch Sea salt
1 pinch ground black pepper
64 ounces passata or crushed tomatoes (tomato puree with seeds removed)
1 tablespoon dried basil
1 tablespoon dried parsley
½ tablespoon dried rosemary
½ tablespoon thyme - freshly chopped
1 pinch red pepper flakes
1 pinch salt
1 pinch ground black pepper
Instructions
- To prepare the pasta with turkey meatballs, start by making the sauce. In a saucepan, heat the olive oil and add all the fresh/dried aromatic herbs along with garlic and pepper flakes. Let the aroma come out without burning the herbs.
- Add the crushed tomatoes as soon as the garlic turn golden. Simmer for 20 to 25 minutes and let the sauce become rich and thick. Season with salt and pepper, taste, and form meatballs.
- In the meantime, blend the turkey, onion, garlic, egg, parsley, salt and red pepper flakes in a large bowl. Mould the meat mixture into balls and place them on a baking sheet.
- Roast the meatballs at 350 degrees Celsius until they are brown outside. Pour the meatballs in the tomato sauce and simmer until it becomes a thick sauce. Let the meatballs be coated with the sauce to combine all flavours.
- Boil a pot of water, then add salt to season the pasta while boiling.
- Drain the pasta and divide it into the bowl or the favourite serving dishes when cooked. Add the meatball and sauce and grate some fresh Parmesan or ricotta for extra flavours. Garnish with dried oregano.
