This scrumptious spaghetti squash pizza bake is pre-cooked! Everyone ate it before I could get it fresh from the oven pic. It went fast!

It’s Fall, and you know what that means – squash season! I love squash, any kind of squash. I love it all.

I had a spaghetti squash lying around, so I wanted to figure out how to use it in a recipe that tasted like Fall, warmed my belly, and I could make ahead with ingredients I had on hand.

This spaghetti squash pizza bake is a must-try if you are looking for a healthy alternative to pizza.

Ingredients
 
 

Spaghetti Squash Ingredients

  • cooking oil1 tablespoon cooking oil
  • Fresh whole spaghetti squash1 medium spaghetti squash
  • Ripe yellow onion on a white background½ medium yellow onion - diced
  • garlic2 cloves garlic - minced
  • Chicken mince1 ½ pound ground chicken (minced chicken)
  • tomatoes14 ounces tomato - diced
  • ketchup14 ounces ketchup (tomato sauce Australia and UK)
  • Italian seasoning1 tablespoon Italian herbs (oregano, rosemary, thyme, and sometimes basil and parsley)
  • Dried oregano, herb circle from above, over white½ tablespoon mixed herbs (usually Thyme, Marjoram, Oregano, Parsley, Sage, Basil)
  • wooden bowl of salt¼ teaspoon salt
  • Spinach4 cups spinach

Topping Ingredients

  •  
    1 handful artichoke hearts - quartered
  • Champignon mushroom1 handful mushrooms
  • Black olives1 handful black olives
  • Iberian pepperoni isolated on white1 handful pepperoni
  • Dried chili pepper flakes in wooden bowl over white1 teaspoon red pepper flakes

Instructions
 

  • Preheat the oven to 400 degrees Fahrenheit, get a paring knife, slice long ways and deseed squash.
  • Place halves on a lightly oiled, tin foiled cookie sheet, and bake until a fork slides through the skin easily (about 30 minutes). An alternative – cut ‘short’ around the middle, deseed, and place in Instant Pot with 1 cup of water. Time on high for 7 minutes. Let the pressure come down for a few minutes, then release it manually. I like the oven method because it gives me time to put everything else together.
  • While the squash is cooking, place oil in a pan, and add onions and garlic. Sauté and stir for about 90 seconds. Add minced chicken, and cook until no longer pink. Add ingredients through salt, heat through, add spinach, stir until wilted, and take off the heat.
  • When the spaghetti squash is cool enough to touch (or get a towel and be careful), take a fork and get the squash out of the shell. Combine with the sausage mixture, and place in a 9×12 or similar style greased baking dish.
  • Lower heat in the oven to 350 degrees Fahrenheit.
  • Place toppings on just like a pizza, and place in the oven for 1 hour or until bubbly. Take out of the range and let stand for 20 minutes. Enjoy!
