This is the best chicken chilli recipe I have ever tasted with a little Emeril and a little bit of my mom! You can easily substitute turkey for chicken.

The first thing to make is “Emeril’s Essence”. I triple the recipe and keep it in my cupboard ready. The ingredient list looks pretty long, but it’s worth it. Trust me.

This is a different take on your usual chicken chilli recipe as it contains Emeril’s essence, instantly making any dish more flavourful. In addition, I included the recipe you can easily follow, which you can use for any other dishes you plan to cook at home.

Ingredients
 
 

Emeril’s Essence Ingredients

  • Red hot chili pepper powder and half isolated on white background2 tablespoons chili powder (chilli powder in British English)
  • ground cumin2 teaspoons ground cumin
  • Pile of red paprika powder2 tablespoons paprika
  • Ground black pepper pile, paths, top1 teaspoon ground black pepper
  • Heap of dried coriander seed and ground coriander on white background1 tablespoon ground coriander
  • Heap of Cayenne pepper1 teaspoon cayenne pepper
  • dried garlic1 tablespoon garlic powder
  • Red pepper1 teaspoon red pepper (red capsicum) - crushed
  • Coarse sea salt top view1 tablespoon sea salt
  • Oregano dried in wooden bowl over white1 tablespoon dried oregano

Chicken Chili Ingredients

  • Glass bowl of olive oil isolated on white background¼ cup olive oil
  • Ripe yellow onion on a white background2 medium yellow onion - diced
  • Red pepper2 medium red pepper (red capsicum) - diced
  • Organic Green Jalapeno Pepper2 medium jalapeno pepper - seeded and minced
  • garlic1 ½ tablespoons garlic - minced
  • Chicken mince3 pounds ground chicken (minced chicken)
  • big bunch of fresh green cilantro isolated½ cup cilantro (coriander) - finely chopped

  • Cocoa powder on white background1 tablespoon cocoa powder - unsweetened
  • ground cumin1 tablespoon ground cumin
  • wooden bowl of salt1 ½ teaspoons salt
  • Oregano (Origanum vulgare) leaves1 teaspoon oregano - crumbled
  • Bowl of sugar1 teaspoon sugar (white sugar)
  • tomatoes28 ounces tomato - diced with juice
  • ketchup946 ml ketchup (tomato sauce Australia and UK)
  • Spoon with tomato paste isolated on white background56 ml tomato paste
  • black beans on white background38 ounces black beans - rinsed
  • red kidney beans in wooden bowl38 ounces red kidney beans - rinsed
  •  
    38 ounces Heinz chipotle pork and beans
  • bowl of fresh chicken broth4 cups chicken stock (chicken broth or chicken bouillon)

Instructions
 

Emeril’s Essence Instructions

  • Combine all ingredients, and it should turn out like this!

Chicken Chili Instructions

  • Heat oil in a large pot, and when hot, add onions and peppers – cook until very soft. Add jalapenos and garlic and cook until fragrant, 1 to 2 minutes.
  • Add chicken, cilantro stems, chilli powder, Emeril’s essence cocoa powder, cumin, salt, oregano and sugar, stirring to break up any lumps until chicken is cooked through and spices are very fragrant.
  • Add tomatoes, tomato sauce, tomato paste and chicken broth and bring to a boil.
  • Reduce heat to a simmer and cook for 20 minutes – add the kidney, black and pork and beans and cook until flavours come together and chilli has thickened (usually 45 minutes), making sure to stir occasionally.
  • Add cilantro and let sit for 10 minutes before serving.
  • Garnish with cilantro and serve with Sour cream and cheese if you want.
