This is the best chicken chilli recipe I have ever tasted with a little Emeril and a little bit of my mom! You can easily substitute turkey for chicken.
The first thing to make is “Emeril’s Essence”. I triple the recipe and keep it in my cupboard ready. The ingredient list looks pretty long, but it’s worth it. Trust me.
This is a different take on your usual chicken chilli recipe as it contains Emeril’s essence, instantly making any dish more flavourful. In addition, I included the recipe you can easily follow, which you can use for any other dishes you plan to cook at home.

My Momma’s Amazing Chicken Chilli Recipe

Ingredients
Emeril’s Essence Ingredients
2 tablespoons chili powder (chilli powder in British English)
2 teaspoons ground cumin
2 tablespoons paprika
1 teaspoon ground black pepper
1 tablespoon ground coriander
1 teaspoon cayenne pepper
1 tablespoon garlic powder
1 teaspoon red pepper (red capsicum) - crushed
1 tablespoon sea salt
1 tablespoon dried oregano
Chicken Chili Ingredients
¼ cup olive oil
2 medium yellow onion - diced
2 medium red pepper (red capsicum) - diced
2 medium jalapeno pepper - seeded and minced
1 ½ tablespoons garlic - minced
3 pounds ground chicken (minced chicken)
½ cup cilantro (coriander) - finely chopped
1 tablespoon chili powder (chilli powder in British English)
1 tablespoon cocoa powder - unsweetened
1 tablespoon ground cumin
1 ½ teaspoons salt
1 teaspoon oregano - crumbled
1 teaspoon sugar (white sugar)
28 ounces tomato - diced with juice
946 ml ketchup (tomato sauce Australia and UK)
56 ml tomato paste
38 ounces black beans - rinsed
38 ounces red kidney beans - rinsed
4 cups chicken stock (chicken broth or chicken bouillon)

- Combine all ingredients, and it should turn out like this!
Chicken Chili Instructions
- Heat oil in a large pot, and when hot, add onions and peppers – cook until very soft. Add jalapenos and garlic and cook until fragrant, 1 to 2 minutes.
- Add chicken, cilantro stems, chilli powder, Emeril’s essence cocoa powder, cumin, salt, oregano and sugar, stirring to break up any lumps until chicken is cooked through and spices are very fragrant.
- Add tomatoes, tomato sauce, tomato paste and chicken broth and bring to a boil.
- Reduce heat to a simmer and cook for 20 minutes – add the kidney, black and pork and beans and cook until flavours come together and chilli has thickened (usually 45 minutes), making sure to stir occasionally.
- Add cilantro and let sit for 10 minutes before serving.
- Garnish with cilantro and serve with Sour cream and cheese if you want.
