4 quarts chicken stock (chicken broth or chicken bouillon) - Homemade Chicken Broth
1 small white onion - diced
3 stalks celery - chopped
2 medium carrots - chopped
½ cup white rice - rinsed (or a cup of dry pasta)
2 sprig thyme - or 1 tsp dried thyme
½ teaspoon sage - dried
2 cups ground chicken (minced chicken) - cooked
1 pinch Sea salt - to taste
1 pinch ground black pepper - to taste- 4 tablespoons miso paste - optional
2 tablespoons cilantro (coriander) - optional
Instructions
- Bring stock to a boil over medium heat. Add onion, carrots, celery, rice and thyme, then reduce heat to low, cover and let simmer for 30 minutes.
- Add chicken and cook for an additional 5 minutes.
