The Spicy Buffalo Chicken Meatball Pizza is a deliciously bold fusion that brings together the best of Italian tradition and American comfort food. It’s the kind of dish that started as a weekend experiment and ended up becoming a crowd favorite—perfect for game day, family pizza night, or whenever you’re craving something hearty with a spicy kick. This recipe pays homage to classic favorites like buffalo wings and cheese-loaded pizzas but elevates them with creative twists and homemade touches.
At its core, pizza has always been a canvas. From its Neapolitan origins to the global variations we see today, pizza continues to evolve with the cultures and palates around it. The Buffalo Chicken Meatball Pizza is a prime example of this culinary evolution. By substituting traditional pepperoni or sausage with spicy chicken meatballs, we’ve turned up the flavor intensity while still maintaining the spirit of a classic pizza. The chicken is seasoned not only with cayenne pepper and red pepper flakes but also layered with rich buffalo sauce and blue cheese—the quintessential pairings for buffalo-style anything.
The inspiration for this pizza comes from the popularity of buffalo wings, often served as appetizers at sports bars and parties. They are tangy, spicy, and usually paired with blue cheese or ranch dressing. Translating this addictive flavor profile into something that could serve as a whole meal was the goal. Meatballs bring the satisfying, protein-heavy heartiness needed to make it more filling, while still being small and tender enough to spread evenly across the pizza. The baking process also allows those flavors to caramelize slightly and blend into the cheese and sauce, creating bursts of bold taste in every bite.
What makes this pizza stand out even more is the homemade dough. Crafting the dough from scratch means you get a perfect balance of chewiness and crispness in the crust, which provides the ideal foundation for the toppings. The addition of cornmeal under the crust not only prevents sticking but gives an added texture that complements the gooey mozzarella and tangy cheeses on top.
This recipe is quite versatile and encourages personalization. If you’re a spice lover, you can increase the cayenne or buffalo sauce. For a creamier texture, blending in a bit more sour cream or swapping in ranch dressing in the sauce can balance the heat. Vegetarians could adapt the recipe using plant-based “meatballs” and dairy-free cheese options—proving how this pizza can cater to a wide variety of tastes.
Ultimately, Spicy Buffalo Chicken Meatball Pizza is about bringing joy to the table. It offers the familiar nostalgia of pizza night with a fiery spin that breaks the routine and makes mealtime exciting. Whether you’re making it from scratch with friends, or preparing a tray for your family on the weekend, this pizza promises flavor, fun, and a whole lot of satisfied smiles.

Instructions
Dough Instructions
- Fill a bowl with 1/2 cup of warm water (I just put water in the microwave for approximately 30 seconds) and add the packet of instant yeast. Let this settle for about 5 minutes until the yeast has dissolved. Then add the rest of the water (room-temp water) and the olive oil. You will then add these liquids into a bigger bowl with the bread, flour and salt. Combine. If you got a mixer with a dough hook, you can knead the dough.
- Roll into a ball and put it into a lightly floured bowl after the dough has been kneaded (about 5 minutes, don’t feel like you need to over-work it). Cover with a damp dishcloth or paper towel and wait for it to rise until it has doubled in size for about 2 hours).
Buffalo Chicken Meatballs Instructions
- Preheat oven to 400 degrees Fahrenheit. Mix all of the ingredients in a bowl, then form into small meatballs. Place on a baking sheet and cook for approximately 20 to 25 minutes or until cooked through. While the meatballs are cooking, you can begin to make your pizza if your dough is done.
Pizza Instructions
- Take 1/4 of the dough and spread it out on a baking sheet or pizza tray. Sprinkle cornmeal underneath. Then combine 2 tablespoons of sour cream with 1/2 cup of buffalo sauce for your sauce and spread that on top of the crust. If you want more sauce, feel free to just keep that ratio.
- Then add your chicken meatballs when they are ready (we sliced ours in half) and then layer on top with cheesiness; we used mozzarella and blue cheese.
- Place in oven at 475 degrees Fahrenheit for 15 minutes or until the crust has browned.
