I have been in Thailand for nearly a month, and I must confess I still struggle to do my grocery shopping. I can not wait for my intensive Thai course because it’s killing me not to understand what is what and not be able to use certain products! However, I can make one recipe a week, and I’ll share one now: yummy pseudo pasta and bolognese recipe.
Konjac, have you ever heard about that plant? I discovered it while I was still in France (you can now find it in every supermarket or at your local Asian store).
Have a read about the fantastic benefits of this plant here! I promised several months ago to a friend to publish a recipe using Konjac. Finally, after several attempts, I think I have found the perfect one for you, especially if you pay attention to your nutrition!
For this yummy pseudo pasta and bolognese recipe, I tried to recreate the taste of spaghetti Bolognese. However, this version is without pasta and without beef (which contains more fat than chicken). Nevertheless, I can assure you that the taste is very similar, the good thing is that you can serve yourself as much as you want!
Yummy Pseudo Pasta and Bolognese Recipe
Ingredients
- 1 medium onion
- 1 medium tomato
- 2 cloves garlic
- 1 medium carrots
- 300 grams ground chicken (minced chicken)
- 1 teaspoon salt
- 1 teaspoon ground black pepper
- 1 can tomato - in juice
- 1 tablespoon olive oil
- 1 bunch parsley - fresh
Instructions
- Peel and chop the onion, garlic and carrot into bits. Heat the olive oil in a pan and cook the vegetables for 10 minutes on medium heat, stirring regularly (the vegetables should not brown, they must soften, and the onion should be translucent)
- Add some salt and pepper, then add thyme (I added a whole red chilli, but this is optional).
- Add the minced chicken meat, some salt and pepper again, and stir. When the meat is cooked, add the canned tomatoes, pour in 3 tablespoons of water to get the tomato juice left, stir and add the water to the rest. Stir and add some fresh parsley (about 2 tablespoons)
- Let it simmer for about 20 minutes, stirring regularly. It’s ready when the “Bolognese” is no longer liquid.
- Cook the pasta noodles as directed on the package. Top with some sauce, wash and chop the fresh tomato, then add it to the dish, with some fresh parsley and cooked shrimp for a touch of Thai!
