My Easy Chicken Enchiladas are probably my all-time favorite Mexican food. I am always saving recipes for them. This cheesy comfort food is my weakness!
In the future, you will probably see several recipes for enchiladas in my search for the perfect recipe. This Easy Chicken Enchiladas recipe is my favorite so far, but if you have one you think I should try, please let me know in the comments below or here. I would love to try it and can’t wait to hear from you.
I made quesadillas before and wanted to do something different with the leftover chicken. To me, making something different out of leftovers is always a bonus. I don’t know about you, but I hate eating the same thing over and over. Sometimes, even twice in a row bugs me… I know… I know, I’m horrible for that. Believe me. My grocery bill feels it lol. It works out in the end, though, because my husband and three kids love leftovers.
As I was searching, I found this easy chicken enchiladas recipe and only slightly modified it to fit what was in my pantry, and it turned out wonderful. You have to try these Easy Chicken Enchiladas!
