These are baked beef and potato wraps — ground beef cooked with cumin, paprika, and tomato sauce, mixed with mashed potato, rolled in flour tortillas with cheddar, and baked until golden. The whole thing comes together in under an hour, and the filling uses pantry staples you probably already have. That combination makes this a genuinely useful weeknight option, not just an interesting one.

About the ingredients

  • Ketchup as tomato sauce: The recipe calls for 1 cup of ketchup (labeled tomato sauce in Australia and the UK). Standard ketchup works fine, but it adds sweetness. If you want less sugar, use canned crushed tomatoes or passata instead — same volume, more savory result.
  • Lean ground beef: Lean is the right call here because the mashed potato already adds richness. An 80/20 blend will make the filling greasy and harder to roll without leaking.
  • Large flour tortillas: Size matters. Small or medium tortillas won’t hold a quarter cup of filling plus cheese without splitting. Burrito-size (10-inch) tortillas are what you want.
  • Cheddar: Any good melting cheese works — Monterey Jack melts more smoothly if you have it. Skip queso fresco here; it doesn’t melt and will just sit dry inside the wrap.

Why this recipe works

The mashed potato isn’t filler — it does real structural work. It absorbs the tomato sauce and beef fat, turning a loose, wet mixture into something firm enough to roll without falling apart. That’s why you mix the potato in thoroughly and taste for seasoning at that stage; the potato dulls salt, so the filling needs a little more than you’d expect. The second thing that matters is placing the wraps seam-side down on the baking sheet before they go in the oven. The weight of the wrap holds the seam closed as the tortilla sets, so you don’t need toothpicks or any other fix.

What can go wrong

  • Filling is too wet to roll: This usually means the tomato sauce didn’t reduce enough during the 10-minute simmer, or the potatoes were undercooked and watery. Let the beef mixture simmer uncovered until it thickens visibly before adding the potato. Drain boiled potatoes well and let them steam dry for a minute before mashing.
  • Tortillas crack when rolling: Cold tortillas split. Warm them briefly — 20 seconds in a dry pan or wrapped in a damp paper towel in the microwave — before you start assembling.
  • Undercooked beef: Ground beef needs to reach 160°F (71°C) internally. The 8–10 minute browning time in the recipe is enough if you’re cooking over genuine medium heat and breaking the meat up properly. Don’t crowd the pan — if it steams instead of browns, the meat takes longer and the texture suffers.
  • Cheese leaks out during baking: Overfilling is the usual cause. A quarter cup of filling plus a modest handful of cheese is the right amount. More than that and the wrap won’t seal cleanly, and cheese pools on the baking sheet.
  • Soggy bottoms: If your baking sheet is thin or uncoated, the underside of the wraps can steam rather than crisp. Line the sheet with parchment, or place the wraps directly on a wire rack set over the sheet to let air circulate underneath.

  • Glass Bowl Of Olive Oil Isolated On White Background1 tablespoon olive oil - extra virgin
  • Ripe Yellow Onion On A White Background1 medium onion - finely chopped
  • Garlic2 cloves garlic - minced
  • Raw Meat Mince500 g ground beef (minced beef) - lean
  • Ground Cumin1 teaspoon cumin
  • Pile Of Red Paprika Powder1 teaspoon paprika
  • Ketchup1 cup ketchup (tomato sauce Australia and UK)
  • Potatoes3 medium potatoes - boiled and mashed
  • Flour Tortillas8 teaspoon flour tortillas - large
  • Cheddar Cheese Block, Paths1 cup cheddar cheese - shredded
  • Wooden Bowl Of Salt1 pinch salt - to taste
  • Ground Black Pepper Pile, Paths, Top1 pinch ground black pepper
  • Big Bunch Of Fresh Green Cilantro Isolated1 bunch cilantro - fresh, for garnish

Instructions
 

  • Heat the olive oil in a large skillet over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  • Add the minced garlic and cook for an additional minute until fragrant.
  • Add the minced beef, breaking it up with a spatula, and cook until browned, around 8-10 minutes.
  • Stir in the cumin, paprika, salt, and pepper. Add the tomato sauce and let it simmer for 10 minutes to meld flavors.
  • Mix in the mashed potatoes until thoroughly combined. Taste and adjust seasoning as necessary.
  • Spoon about a quarter cup of the beef and potato mixture onto each tortilla. Sprinkle with cheddar cheese, then roll tightly.
  • Place the wraps seam-side down on a baking sheet. Bake in a preheated oven at 180°C (350°F) for 10 minutes, until the tortillas are golden.
