Guilt-Free Paleo Bacon Meatloaf

- 1 ¼ pounds of organic grass-fed ground beef
- 5 strips of organic bacon
- 3 whole carrots
- ½ yellow onion
- 5 cloves of garlic
- 9 white mushrooms
- 3 cups of spinach and/or kale
- 2 egg whites
- ½ 15-ounce can no salt added tomato sauce
- ¼ teaspoon of celery salt
- 1 teaspoon of black pepper
- 1 teaspoon of garlic powder
- 1 teaspoon of chilli powder
- Fresh herbs of your choice
- Sauce Ingredients
- 1 teaspoon of Worcestershire sauce
- ½ teaspoon of black pepper
- ½ teaspoon of garlic powder
- ½ 15-ounce can of no salt added tomato sauce
- 1 teaspoon of grass-fed butter
Instructions
Loaf Instructions
- Preheat the oven to 350 degrees Fahrenheit.
- Grease a large glass pan.
- Cook bacon until nice and crispy. Mince up into small pieces.
- Food process all veggies to uniform size. Fold into ground beef, and add bacon, egg whites, spices, and half a can of tomato sauce. Mix by hand.
- Mold meat mixture into a loaf shape in a pan. Cover with foil and pop into the oven.
Sauce Instructions
- Add the remaining half can of tomato sauce, Worcestershire sauce, honey, pepper, garlic powder and butter to a saucepan over medium heat. Bring to a simmer for 1 to 2 minutes. Set aside.
- After 15 minutes, take the meatloaf out of the oven and cover the top with sauce. Recover and continue cooking for 45 minutes. Make sure that the meatloaf reaches 160 degrees for safety!
